This new process made at La Floresta coffee farm in Circasia, Quindio, is capturing new flavors through extended fermentations. Our microclimate si soooo humid that it is incredibly difficult to dry anything. We have experienced over 4 years of a wet season which has forced us to consider new opportunities on coffee processing. Washed processes are much easier to dry but they do not have to always be the same. This process has many of our classic components but includes some new fun flavors created by extended fermentations.
The tropical Green Jay can often be spotted in parts of southern Texas where it is found in native woods and mesquite brush. This bird often travels in pairs or small groups and although they can be hard to spot at times, they are always communicating with one another and their loud calls are unmistakeable.
